Green Vegan Pho

Is there any better aroma than a simmering pot of vegetable stock that has ginger, star anise, clove, cinnamon and cardamon tossed in.

This isn’t boil the bones and steep your spices for 6 hours Pho but it’ll quell your craving.

Add your favorite veggies, cilantro, lime, noodles (or not), and there you go.
