                        Peanut Butter Banana Grain Free Muffins

Anyone who follows me on Instagram knows I am obsessed with bananas. I don't know why bananas bake up like flour but they do. Even better when combined with a nut butter. 

I would much rather prefer to use a nut butter in a baking recipe in lieu of a flour, even a healthy one. They make for moister (more moist?) baking.  

These are super high in protein and fiber or you can just consider them a vehicle for melty chocolate.  They take about 5 minutes to prep and 15 minutes to bake. Yup. 

 

 

Recipe makes  approximately 24 mini muffins
Preheat oven  to 350 degrees 
Grease muffin tin with coconut oil or good butter, grease the top of the tin as well  
1  1/2 cups real peanut butter (chunky or creamy- FYI peanut butter ingredients : peanuts. There shouldn't be anything else in your peanut butter except salt. You can substitute any nut butter.  
3 ripe  bananas 
1 egg 
1 tbsp pure vanilla 
3/4 cup real maple syrup 
1 tsp baking powder 
1 tsp salt 
3/4 cup chocolate chunks (I use "Enjoy Life") 
If you want them to be vegan you can omit the egg . They are slightly more delicate without the egg but it works. ( it's magic).  
Fill muffin tins 3/4 full and bake for 15 - 20 minutes or until dark golden brown. 
Let cool fully before removing from tray.
