Mashed Cannellini Beans, Tomatoes, and Thyme

vegan/gluten free         

When people ask me for recipes I get instant anxiety. I don't know why, maybe because I don't have one. I cook tasting the food through the process and tweak as needed and I never know the amounts in the end.  I prefer to teach technique and taste than recipe.  I am encouraging everyone to cook this way to help end my anxiety and free up my nights. Lets make #Ihaterecipes a thing. 

The first time my mom had beans cooking on the stove I remember thinking  "whatever".  Then she would spoon out a few on a plate to test their doneness, mash them with a fork and splash with olive oil, salt and pepper.  I would  eat off her plate and I was always shocked that I loved beans. Everytime. Even now I don't remember how much I love beans until they are mashed on a plate.   

This dish can't get any easier or tastier. 

5 or 6 smashed garlic cloves ,

4 or 5 plum tomatoes halved

and a few sprigs of thyme 

splash of olive oil

all things in a hot pan , cook on med or med low until tomatoes are saucy

spoon over cooked mashed beans 

sea salt and pepper
