chia pudding, stewed rhubarb

Vanilla Coconut Chia Pudding Topped with Stewed Rhubarb 

vegan/gluten free/ paleo

RHUBARB!! 

That's really how I feel about Rhubarb. Cooked down with a little bit of raw sugar and rhubarb becomes a just sweet enough, tart and tangy thing. 

AAAAND, 100 grams of rhubarb only has 21 calories. 21! Now I don't actually count calories but I'll sure count them if there's only 21.  It's also crazy high in fiber as well as vitamin K which is good for brain health.

3 stick s of rhubarb chopped, in a pot with 1/2 a cup of water and a 1/4 cup of raw sugar. Simmer on low to medium low heat until cooked to a compote (about twenty minutes). 

Chia Pudding- mix 1 cup  chia seeds to 2 cups coconut milk with 1 tbls vanilla. Let stand in the fridge,  after 2 hours you'll have pudding! I don't add sweetener to this because the topping is sweet enough for me but you can add a tbsp of real maple syrup or raw honey if preferred.
